Mayan Mango pepper sauce

A medium sweet hot pepper sauce.

I wanted to create a fresh tasting sauce. A little heat from the habaneros and scotch bonnet, the sweetness from the mangoes, the zest from the limes and the potent flavour of the ginger.

Goes well as an condiment, or break it down with a little oil to make a marinade for veggies, Tofu, fish, chicken.
