Easy Slow Cooked chilli
This recipe can’t get much simpler. Literally everything goes into the pot (except kidney beans) however, you can add at the beginning but you’ll find beans will breakdown and become very soft)If you like your beans firm add an hour/half hour before serving. I make this dish a lot. If you’re heading to work or you’re gonna be out all day or you just want a reliable quick recipe… This is the recipe for you! And when you walk through the door the aroma will hit you…You won’t be disappointed!
Can be made with lean mince, and beef stock cube.
Serve on its own with fresh coriander, chopped onion and cheese.
Over rice, or tortilla chips on the side. Choice is yours… enjoy!
200g soya mince
1 large onion
2 peppers (red& green)
1 handful of red lentils
1 400g run chopped tomatoes
1 tablespoon of tomato purée
1 veg stock cube
1 tablespoon cumin1 tablespoon oregano1 tablespoon ground coriander
1 teaspoon chilli powder
1 teaspoon cayenne pepper.
Dash of dark soy sauce. Tin kidney beans.
Fresh coriander to serve.
Pop everything other than the kidney beans into a slow cooker along with 400g water (fill empty tomato tin and add to ingredients.)
Set slow cooker to auto. 6-8hours.
